My inaugural pizza is inspired by a show on the Food Network, which featured a Chicago establishment called Dimo's Pizza. They have a number of unique pizzas, one of them being the chicken and waffle pizza. So I decided to create my own version.
Ingredients
- One Tesco pizza crust
- Two frozen breaded chicken breasts
- Four waffles
- Two tablespoons of maple syrup
- Two handfuls of cheese

Preparation
- Preheat your oven to 200 degrees, or gas mark 6.
- Defrost the chicken breasts in the microwave for two minutes.
- Cut the waffles into approximately one-inch squares and place them throughout the pizza base.
- Dice the chicken and use it to fill the gaps between the pieces of waffle.
- Spread the maple syrup over the pizza, followed by the cheese.
- Bake at 200 degrees, or gas mark 6, for 20-25 minutes.
The Verdict
I don't think I had enough maple syrup for the waffles that I had. There were a number of sweet bits in there, but I think doubling the amount of syrup would have added the extra kick.
I also hardly noticed the chicken, because it was dwarfed by the waffle. Next time, I'd probably double the chicken.
There is potential in this pizza. I will try adjusting the chicken-to-waffle ratio a little bit next time I try this and see what improvement it makes.
